WHO ARE WE ?: Founded in 1986, Matsuri was the first brand to introduce the kaiten sushi (conveyor belt sushi) concept in Europe. For more than 30 years, the brand has embodied a convivial and family-oriented Japanese dining experience, synonymous with freshness and accessibility, combining speed with an immersive atmosphere.

Acquired at the end of 2023 by a trio of experienced executives, Matsuri is now undergoing a true renaissance: a new visual identity, a redesigned architectural concept, and a modernized Japanese-Californian menu blending classic favorites with creative twists, all set within a universe inspired by Japanese pop culture.

In 2025, we welcomed our first franchisee. Since January 2026, two new franchised restaurants have opened in Grenoble and Luxembourg.

We are currently in the process of opening in more than 15 additional cities across France (Nice, Marseille, Cannes, Reims…), Europe (Geneva, Brussels…), and Dubai !

We are now looking for our next partners, both in city centers and retail park, whether experienced multi-franchisees or committed first-time operators, to write the next chapter of the Matsuri story together.
